<image:title>Weekly Dinner Recipe Round-Up - Dinner recipe round up. week 4 - Wednesday: Salmon Burgers with Slaw - Pinch of Yum We are using canned salmon here so these are easy and budget friendly. I will likely serve these with some roasted potatoes. Wait. I’m so excited for this dinner.</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner recipe round up. week 4 - Monday: Mediterranean Quinoa Bowls with Roasted Red Pepper Sauce - Pinch of Yum Mediterranean flavors are always a hit in our house. I am really trying to use up a bunch of pantry ingredients this week and luckily this recipe does just that! I might sub out rice for quinoa depending on when I actually end up making this for dinner. Also here is your permission slip to say quinoa isn’t that great. It tastes way less good than rice and I’m not afraid to say it. I’m just hell bent on not being wasteful so here we are. Using up some quinoa.</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner recipe round up. week 4 - Tuesday: Vegetarian Taco Skillet - two peas & their pod Please do not be alarmed by the amount of spices in this dish. I typically just stand in front my spice cabinet with my measuring spoon and measure all spices at once into a small bowl so I can just dump it. It will save you time and from swaying back and forth between your spices and your range. We’re all about efficiency here, folks. Anyway, I can’t wait to dip some chips into this taco skillet and call it dinner!</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner recipe round up. week 4 - Thursday: Instant Pot Mac and Cheese - Pinch of Yum Ok wow, with my THIRD recipe from Pinch of Yum for the week. It looks like I really need to diversify my sources. Every single one of her recipes I’ve made over the years has never failed me though. But I promise I will look elsewhere next week. I’m serving this with BBQ tempeh. If you’ve never had tempeh, it’s a fermented soy based protein. I know that sounds incredibly unappetizing but I personally love tempeh. It’s kind of earthy and toothsome. I’ll slice that up, sautee it with some olive oil and douse it in bbq sauce. This dinner could definitely use something green so you if you have the energy, go for it. I probably won’t and that’s ok!</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner Recipe round up. Week 3 - Monday: Cauliflower Black Bean Tostadas with Queso and Pickled Onions - Pinch of Yum I have to be honest, since the first time I made this recipe I have become one of those annoying people that almost always has pickled onions in their fridge. They are just so versatile and add that je ne sais quoi to seemingly boring dishes. This dish is anything but boring. It’s the only way I’ve been able to get Lane to eat cauliflower and *gasp* enjoy it. Sorry to call you out like that, Lane. It seems kinda kooky to be frying something on a weeknight but I promise it’s very easy and it’s so worth it.</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner Recipe round up. Week 3 - Thursday: Spiced Chickpea Stew with Coconut and Turmeric - Alison Roman via NYT cooking I love Alison Roman. Her recipes are so simple, delicious, and rich. This one is no exception. It has pretty standard pantry ingredients but turns into something beautiful. Not to mention it’s chock full of immune boosting ingredients (I know immune boosting is a bit of a misnomer) - garlic is antiviral and antibacterial, ginger is warming and great for digestion, greens are such a nutritional powerhouse, turmeric is anti-inflammatory, and coconut has so many lovely fats that are nourishing to our brains and body.</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner Recipe round up. Week 3 - Tuesday: Marry Me Chickpeas - Live Eat Learn This recipe literally blew me away when I made it. The flavor is insane and it’s so easy. I thought I hated sun dried tomatoes until this recipe. So if that’s you too, please give it a try. I have also subbed out the chickpeas with tofu and done a half and half mix of tofu and chickpeas. Wild, I know. Can confirm both are delicious! Tofu will add a bit more protein, chickpeas will add a bit more fiber. You do you, boo!</image:title>

<image:title>Weekly Dinner Recipe Round-Up - Dinner Recipe round up. Week 3 - Wednesday: Black Bean Burgers - Mark Bittman via NYT cooking I haven’t tried this one yet but over 3500 5 star reviews??? You can’t possibly go wrong. Just put a bunch of stuff in the food processor, form patties, cook and serve. To make this more of a meal, I will likely serve with whatever freezer fry I have lying around (sweet potato or regular potato). You could do a salad if you family eats green things.</image:title>
